Abby told me about a great little "recipe" for a banana pancake... one banana, one egg--in a blender. Pour into skillet and cook like a pancake. Sounded so easy and tasty! I tried it Thursday night... what a flop! How could I have screwed up such an easy recipe?? It looked more like... well, to be nice, I'll just say it had the consistency of a very wet bread pudding. What did I do wrong? Was my banana too ripe? Did I over-blend it? Did I try and flip it too soon? Whatever I did was just not right. It didn't taste... bad, really, but it wasn't really good either. It kind of reminded me of a banana-flavored scrambled egg and that's just gross.
Tried again last night. This time I added a tablespoon of ground flaxseed and a scoop of whey protein. Oh, and I sprinkled a bit of cinnamon in it. I think it gave the mixture a little more texture. Result? Near perfection! Isn't it pretty?
However, I thought I could improve on it just a tad.
This morning, made the pancake the exact same way, but when it first came out of the skillet, I spread some almond butter over it and topped it with some chopped apple then sprinkled a bit more cinnamon over the top. This was fabulous!
