Grilled Salmon & Steamed Broccoli, Please
My mother had surgery last week in Jonesboro, Arkansas and I went to be with her. I knew eating clean and healthy was going to be somewhat of a problem, but I was determined to do my best.
Thursday night, my brothers, Matt and Marc, my sister-in-love, Christy and I went to Cheddar's for supper after Mother's surgery was over and she was recovering quietly in her room. I ordered grilled salmon and broccoli. Marc also ordered the salmon; we talked briefly about the changes I was making with nutrition. Marc said he often times tries to eat healthier and I enjoyed being able to carry on a conversation about "healthy" food and trying to give him a few tips and pointers about things I've learned the last several weeks.
Friday morning, I grabbed something in the hospital cafeteria because I didn't want to chance missing the doctor. So much for healthy options for me! On the hot line, there was bacon, sausage, biscuits, gravy, sausage gravy and eggs. On the cold line, there was... nothing. There were candy bars and chips available, but no fresh fruit. I got a few pieces of bacon and a little bit of the eggs (I dreaded them because there obviously not "real"). I also got a biscuit and poured some gravy over, just in case the eggs were really yukky. I ate the bacon, a couple bites of the egg and not even half the biscuit and gravy. I was done.
For lunch Friday, I went to Red Lobster which was practically next door to the hospital. I knew I could find something pretty healthy there, and I did. I had grilled salmon, steamed broccoli and steamed asparagus. You know those wonderful Cheese Garlic Biscuits they have there? The ones that are so dang yummy? Yeah, I didn't have one. Not even one bite (like I possibly could have stopped at just one bite anyway!). Oh, I also had a little salad with that meal. Chose French dressing just because I wanted to be a bit different; I used about 1/4 to 1/3 of that little cup they bring the dressing in... I didn't need much!
After I got Mother settled in at the inpatient rehab facility where she'll be for 10-14 days, I made sure she ate her supper then I headed to Kennett. I picked up my son, Ross, and we headed to Las Margaritas at his request. I chose a grilled chicken breast with onion, tomato and bell pepper (basically just the fixings for chicken fajitas minus the tortillas). I also ordered guacamole which is something I had never in my life done before. I ate some of that with my chicken (after I had dipped it in the salsa). All in all, not a bad dinner.
Saturday, Matt, Christy and I went back to Jonesboro to see Mother. Before we went to Rehab, though, we ate lunch at O'Charley's. Want to guess what I had? Grilled salmon, steamed broccoli and steamed asparagus! Matt and Christy ordered dessert and I was slightly tempted, but really was full from my meal (and the half and half tea I had ordered).
Saturday night, I went to my friend Kim's to visit a while. Her dad had just left there after having supper and there was some fried cornbread there on the counter. I couldn't resist... I ate a piece!
I headed back home on Sunday. I stopped in Jackson, Tennessee to visit my old friend Ronda and her little sidekick, Scooter. We chose Olive Garden. Take a wild guess what I ordered? Grilled salmon and steamed broccoli! Of the four grilled salmon and steamed broccoli meals I ate in those four days, this was by far the best tasting meal! The salmon was a little drier than I would have liked, but the flavor was right on. The broccoli had some good flavor as well.
I had taken my stability ball, dumbbells, yoga mat, workout clothes and my big binder full of menus, workout plans, running plans, and all that other stuff Abby has given to me. I had great intentions of doing something every day. But, you know what they say about the best laid plans of mice and men... my plans also went astray.
Back at it this week, though. It's Monday night... I'm going to miss my Small Group Personal Training class. I need to run in the morning. I'm at a plateau on the weight loss... 10 1/2 pounds. Ready to lose some more!
